Zucchini Hash Browns

Yield: 1-2 people

Ingredients:
1 small potato
1 medium zucchini
1 small onion
2 T vegetable oil
salt
pepper
cayenne
cilanto or parsley (I used cilantro)

First peel the zucchini and tomato. In two separate bowls grate zucchini and potato. Season with salt and peppers to taste. Dice onion. Heat oil in skillet. Once hot add potato and onion. Stir constantly. Taste occasionally. Once potato is nearly through cooking add zucchini, mix thoroughly and continue to stir until zucchini is cooked.

*Optional, dice cilantro or parsley and add to skillet with zucchini.


Serve with a garnish of cilantro or parsley.

Suggested accompaniments?
• Tomato slices
• Eggs
• Turkey sandwich on toast
