Garlic Curry Risotto & Stuffed Avocados

Yield: 1-2

Risotto Ingredients:

¼ c risotto rice

1 T curry powder

1 garlic clove, pressed

1 tsp salt

2 tsp cayenne

Bring water to a boil, add rice. Stir often. Salt water. Add pressed garlic while still simmering. Stir. Add cayenne and curry, add more to taste. Continue stirring frequently until creamy. Add small increments of water if water cooks down before proper consistency. After adding additional water check taste and add additional necessary if necessary.

Stuffed Avocados Ingredients:

1 ripe avocados

1 can of tuna packed in tomato

1 large garlic clove, pressed

1 medium onion

salt

pepper

cayenne

Cut avocado in half lengthwise. Remove pit. Remove avocado filling from skin while keeping shell intact. Chop avocado filling. Add to bowl. Dice tomato and onion, add to avocado, mix well. Add tuna, mix well. Add the garlic, pepper, cayenne and salt to taste.

Serve avocado mixture in original shell on plate with curry rice. Garnish rice with cilantro.

Suggested accompaniments

- grilled salmon

- fish tacos

- burger


Note:

If tuna packed in tomato is unavailable, use tuna packed in vegetable oil and drain. If desired, can mix with tomato sauce or eat add plain.
